Galen's Good Old
"Galen's Good Old" is a gouda style cheese from Clover Creek Cheese Cellar of Williamsburg, Pennsylvania. Although gouda can take on a variety of flavors and textures as a result of aging, "Galen's Good Old" is a fairly young gouda that has a smooth texture with a gentle, nutty flavor and creaminess to its light, salty, tangy taste.
DID YOU KNOW? Gouda style cheese originated in the Netherlands - probably sometime during the 1100s. Due to strict feudal rights during the Middle Ages, farmers from within the region were only allowed to sell their cheeses in the market square of Gouda in South Holland!
According to the folks over at Clover Creek Cheese Cellar, "Galen's Good Old" was named after the man who helped them to build their cheese production facilities. Clover Creek also produces "Smoked Galen's" - an alternate version of "Galen's Good Old" that retains its creaminess even after the smoking process is complete.
Like all of the cheeses produced by family-operated Clover Creek Cheese Cellar, the milk that went into "Galen's Good Old" came directly from a mixed herd of pasture-raised cows and the curds used in this particular cheese were cut, stirred and washed by hand!
