The Homesteader (revisited)
Now that fresh basil is back in season here in Western Pennsylvania, we're getting more and more questions about fresh mozzarella at the farmers markets. It always breaks our hearts when we have to tell patrons that no one in the region is making farmstead mozzarella due to the fact that it's a pretty labor intensive cheese, but I will say that I've never heard any negative feedback on our follow-up recommendation: a creamy little farmers cheese called "The Homesteader."
While it isn't technically a mozzarella, "The Homesteader" behaves like an aged mozzarella and it's my #1 go-to for mild, melty baked dishes like pizza and lasagna. This semi-soft, sweet-cream flavored raw milk cheese from Pasture Maid Creamery of New Castle, Pennsylvania is a favorite among children and mild cheese lovers alike. It's also great for slicing and enjoying alongside fresh basil, oil and vinegar in a caprese-style salad (although local tomatoes won't be in full swing for a few more weeks).
