Goat Milk Feta

This week's local cheese selection, a soft and briny goat milk "feta" style cheese, comes from River View Dairy. The river referenced in this small farm's name is the Clarion River - these happy goats ive in Emlenton, Pennsylvania.

The salty, crumbly character of River View's feta makes it great for sprinkling onto salads and into pasta dish or omelettes. You might also enjoy baking this into cheese pies, casseroles or stuffed inside of mushrooms.

Traditionally, feta comes from Greece and contains milk from both sheep and goats and falls under strict regional manufacture regulations. "Feta" from other regions is sometimes made with cow's milk, but our cheese was made using only fresh, local goat's milk. While some goat cheese can be particularly tangy, this goat milk feta has an almost sweet taste. The River View Dairy family has worked diligently to create products that please milder cheese-loving palates. They also create a variety of creamy "chevre" style cheeses rolled in fresh herbs, as well as an aged "tomme" style goat cheese that they call Meadowbelle.
