Earth Tomme
Milky Way Meadow's "Earth Tomme" "Earth Tomme" is a mild, semi-soft cow's milk cheese that is made from partially skimmed milk. This dense cheese is surpisingly soft, sweet and milky in taste.
Tommes are alpine style cheeses that originated as a way to preserve the low-fat milk that is left after skimming off the cream for butter or other cheeses. Despite being made from skimmed milk, our "Earth Tomme" is very velvety in texture. The rich density of this cheese makes it perfect for grating and melting into polenta, grits or potato dishes.
The Milky Way Meadows farmstead, located in Townville, Pennsylvania, hosts a greenhouse that produces fresh grasses for the cows during winter months. Milky Way Meadows' nutrient-rich milk is heated minimally during the cheesemaking process, allowing the milk to retain its beneficial enxymes, vitamins and minerals.
