Cellar-aged Cheddar
On the table this week: Clover Creek Cheese Cellar's original Cellar-aged Cheddar.
Cheddars tend to become crumbly with age, but the folks at Clover Creek Cheese Cellar in Williamsburg, Pennsylvania use their farmstead cellar to age this original Cheddar to creamy perfection.
Clover Creek Cheese Cellar also uses this recipe and aging process to create a sharp and tangy wine-washed cheddar called "Uncle Joe's," a tomato-basil packed "Bruschedda" and a hot-pepper cheddar named "Honduran Harvest." Each of Clover Creek's cellar-aged cheddars are tasty snacking cheeses, but they're also nice melting cheeses that can be used in a variety of baked goods - like buttermilk biscuits!
