Pirate Blue

"Pirate Blue" is the only blue cheese that we carry at Family Farm Creameries because it's the sole blue cheese made here in Western Pennsylvania! This regionally-rare cheese comes from Clover Creek Cheese Cellar of Williamsburg, Pennsylvania.

What makes it blue? Blue cheeses are treated with special molds that turn green, dark blue or even black when exposed to air. In addition to scattered pockets of color, if you notice colorful streaks in your piece of "Pirate Blue," that's because the wheel was pierced with needles in order to allow air to reach the inside of the wheel and further develop both the texture and flavor of "Pirate Blue."

"Pirate Blue" is rich, creamy and sharp. The blue veins help this very soft cheese to crumble nicely and to be easily spread with a knife. As an appetizer or snack, blue cheese pairs nicely with honey, fresh apples or pears, but it's also great for baking into savory dishes alongside butternut squash, onions or even mushrooms. Then again, you could always make your own blue cheese dressing with some fresh herbs and a pint of our Brunton Dairy Cream. Don't let preconceived notions deter you from thoroughly enjoying this beautiful, flavorful cheese!
