α & Ω (Alpha & Omega)

"α & Ω" or "Alpha & Omega" are the first letters of the Greek alphabet. This cheese, which comes from our friends at Clover Creek Cheese Cellar, is named "α & Ω" because it is a feta-style cheese and feta originated in Greece. While traditional feta is made of sheep's milk or a combination of sheep and goat's milk, Clover Creek Cheese Cellar's feta is made exclusively of cow's milk from their family farm in Williamsburg, Pennsylvania.

"α & Ω" is semi-firm at first, but once sliced it crumbles beautifully and has a silky soft and creamy mouthfeel. The curds for this cheese, like others from Clover Creek Cheese Cellar, were stirred and cut by hand, then packed into molds and pressed by hanging weights. The flavor of "α & Ω" is quite salty and very sharp. Its saltiness comes from being kept in a brine while it aged.

Due to its style, "α & Ω" will dry out and change consistency quickly, so if you don't use it all at once, please consider storing it in a container with brine or salted milk.
