Goat Milk Chèvre
River View Dairy, a small farm located along the Clarion River in Emlenton, Pennsylvania, produce many of the goat milk cheeses that we carry here at Family Farm Creameries.
Goat milk chèvre is a fresh, semi-soft pasteurized cheese that comes in hand-rolled "log" form and can be easily crumbled or spread with a knife. The chèvre from River View Dairy is creamy with a slightly salty, tangy flavor that can be enjoyed by itself or utilized in both sweet and savory dishes. Although the texture of this cheese is dense due to its heavy moisture content, its mouthfeel is very soft and almost fluffy.
Chèvre partners nicely with seasonal produce like squash in pasta recipes or roasted beets over mixed green salads. It's also great for pairing with pears in baked goods like tarts and danishes. I've even used it as the base for a cream-cheese-style frosting for carrot cake and zucchini bars. I whipped it with honey to create a sweet and creamy icing-like spread. Chèvre and honey are an amazing combination - especially if you add nuts to the equation!

If you would like to try other goat milk products, we also carry River View Dairy's goat milk yogurt, which comes in both plain and rhubarb varieties. Another option is River View's "Meadowbelle" - an aged raw milk cheese with a natural mold rind that is made only seasonally.
