Bamboozle

Say "Hello" to Goat Rodeo Farm! Sadly, we've become accustomed to losing local farms and cheesemakers, but thanks to people like you who value local farmstead cheese, this trend may be reversing. Enter Goat Rodeo Farm - the dream of India and Steve Loevner. And I do mean dream, their farm is one of the most beautiful and thoughtful milking and processing facilities that I have ever seen. What's even better? They are located in Allegheny County on 130 acres north of Pittsburgh.

The Cheese:

Bamboozle is a goat cheese washed in beer from Roundabout Brewery. Washing cheese in beer is not a new hipster use for beer when a homebrew goes bad. This is actually an ancient tradition - think Belgian and French monks. The beer helps develop a special red-orange bacteria on the rind that makes the cheese soft, meaty and creamy. It also makes it stink! This particular cheese is mild and is a great introduction to this style. Like all great flavors worth appreciating, your pallet will need time to develop. So, if you don't like it at first, make sure you try it again.

(this is Matt the cheesemaker showing me how he hand washes each loaf of Bamboozle)
