"Allegheny" is a sweet and buttery crowdpleaser that comes to us from Hidden Hills Dairy of Everett, Pennsylvania.
The Hidden Hills Dairy farm has been home to a happy, healthy herd of Jersey dairy cattle for over 60 years. Lori and Rex Knepp manage the farm today, though they've downsized a bit since Lori's family first began developing the original herd in 1955.
Today, Hidden Hills Dairy is all about high-quality small-batch cheesemaking. They use only fresh, raw milk from their eight grassfed Jersey cows. The girls graze the Hidden Hills fields from April to October and enjoy mounds of homegrown alfafa and hay in through the winter.
"Allegheny" is a whole milk cheese that's produced in the wintertime, but its style is similar to that of a young Asiago, which is traditionally procuded in Italy in the summertime. This cheese is semi-firm, mildly tangy and easily sliced. It's also a great melter - perfect for laying over hot meatball sandwiches!
