Smoked Galen's
"Smoked Galen's" is the smoky alternative to "Galen's Good Old" - a sharp and creamy farmstead Gouda produced by the Rice family at Clover Creek Cheese Cellar of Williamsburg, Pennsylvania.
I'd have to check the numbers to be sure but "Smoked Galen's" is probably the most popular cheese that we carry here at Family Farm Creameries (though "Chore Time Sharp Cheddar" might be a close contender). We find ourselves constantly restocking the "Smoked Galen's" supply and the cheesemakers themselves have noted that it's their most popular cheese among farm market patrons, too.
Personally, I enjoy "Smoked Galen's" crumbled and melted into (or over) a handmade burger patty. It's super flavorful and a fantastic melter.
If you're looking for alternative ways to enjoy your "Smoked Galen's," it should be noted that Smoked Gouda is an increasingly popular dessert cheese. The smokiness and buttery consistency of this cheese is perfectly contrasted by the dry bitterness of dark chocolate. If you've not yet heard of Dulcinea Craft Chocolate, here's a wonderful opportunity to have your mind blown. Our friend, Laurie Rice (presumably unrelated to the Clover Creek clan), produces amazing bean-to-bar chocolates in nearby Beaver, Pennsylvania. I'd suggest pairing "Smoked Galen's" with either a bar of her 70% Dominican Republic or 68% Bolivia. Toss a few toasted hazelnuts and a brown ale into the mix for added flavor - and fun!
