Chickabiddy
"Chickabiddy" is an astounding little pyramid-shaped bloomy rind from Goat Rodeo Farm & Dairy of Allison Park, Pennsylvania.
Packed with fresh milk flavor, "Chickabiddy" is expectedly creamy, sticky and earthy, but the innermost paste is thick, tangy and crumbly - practically chèvre-like. This combination of flavors and textures makes for a rich and delicate tasting experience. The rind and paste are just thick enough that a tasting vehicle (i.e. cracker or baguette) is unnecessary.
If you're looking for garnishing options, try a savory local honey and some walnuts but go easy on the drizzle. A honey too bold could mask the cheese's own pungent sweetness.
As for boozy partners, the cheesemakers suggest dry sparkling wines.
