Curd
Curds are among my favorite comfort foods.
These squeaky, buttery, pasteurized cow's milk curds keep their shape at high temperatures, making them great for baking and frying. Curds don't require cutting like aged, pressed cheeses so they're perfect for snacking but have been traditionally enjoyed fried or in poutine. Alternatively, I'm considering homemade stuffed crust pizza.
Our favorite local curds come from Adam Dean of Pasture Maid Creamery in New Castle, Pennsylvania.
